Ingredients
- 4 yellow squash (little to medium), cut into 1/4-inch to 1/2-inch rounds
- 3 tablespoons olive oil
- salt and new ground pepper, to taste
- 1 container of panko crumbs
- 1 container ground Parmesan cheddar
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Cooking splash (I utilize Organic Olive Oil by Pam)
- You can add Non-Fat Plain Yogurt if you want to
How to make it
- Preheat oven to 450.
- Line 3 baking sheets with baking paper and put it aside.
- In a large blending dish, join the squash, olive oil, salt and pepper; then blend them all until they are thoroughly mixed.
- In a different bowl, mix the panko morsels, Parmesan cheddar, oregano, and garlic powder together.
