Spicy Quinoa Lettuce Cups

When people are watching their weight, they tend to diet and while in the  process, they eat certain foods and also most times even skip meals. Research has shown that when watching your weight it is advisable not to even diet and you are encouraged to eat regularly, although your regular eating should be in moderate quantity of anything you wish to eat and in all your eating you are advised to eat healthy.

When people skip meal they tend to eat more when ever they see food thereby leading to weight gain. Healthy eating involves eating the food with the right amount of nutrients needed by your body. Healthy eating does not only include your main meals it also includes the snacks that you wish to eat.

People are advised to carry about and eat their healthy snacks, because if you don’t have your healthy snack you might be tempted to go grab that unhealthy bar of chocolate. The spicy quinoa lettuce cups is an example of a healthy snack that could be taken without fear of unhealthy eating and weight gain. Aside from the health benefits this recipe is very easy and fast to prepare it takes  almost 30 minutes to get ready.

1. Ingredients

  • 1/4 avocado
  • 3/4 cup mixed quinoa
  • 125g tin four bean mix, drained and rinsed
  • 1 3/4 cup of vegetable stock
  • 1 tablespoon of lemon juice
  • 1 garlic clove crushed
  • 4 large cos lettuce leaves
  • 4 tomatoes diced
  • 1/4 bunch of finely chopped coriander
  • 2 tablespoon of chili [pepper powder
  • 2 tablespoon of ground cumin

2. Method

Place your quinoa into a saucepan and add your vegetable stock, then put on the fire and allow to simmer for 15 minutes. Preheat your oven to 180 degrees and line your baking tray with a greaseproof paper. Drain your cooked quinoa and spread on the baking tray, then on the baking tray add your bean mix, garlic and spices and then mix up. Place it in the oven and bake until the quinoa is slightly crunchy this will take around about 15 minutes.

In a different bowl, mash your avocado and lemon juice together and keep by the side, then when the quinoa is ready bring out of the oven and toss your tomato and coriander through the quinoa and bean mix it. To serve, spoon your quinoa mix into the lettuce leaves and scoop a considerable amount of mashed avocado on it and serve.
